Poached eggs are the performance art of breakfast cooking. They’re delicious, healthy and easy to accessorize or present in a multitude of impressive ways. Even more, they’re pretty to look at. The only problem is, poached eggs are notoriously difficult to prepare correctly. However, with the following trick you’ll be able to poach an egg like a pro.
It’s pretty simple. All you have to do is boil an egg for 10 seconds before cracking it into the water for poaching. This “flash-boil” helps the egg retain its shape.
This clever trick originates from Julia Child, the world-famous chef and guru. She preferred to poke a hole in an egg to release any air that might cause it to crack, then boil and then poach.
After the “flash-boil,” continue to poach the egg as you normally would, creating a funnel in the simmering water (with a few drops of vinegar added) and gently pouring the cracked egg inside.
